Kämnärsrätten's cornelian cherry cordial


A simple and delicious recipe for a refreshing cordial.

Ingredients

5 dl ripe cornelian cherries from AF Bostäder’s fruit trees
5 dl water
1–2 dl sugar (adjust to taste)
A splash of lemon juice (optional, for extra freshness)

Instructions

  1. Bring the cornelian cherries and water to a boil in a saucepan. Reduce the heat and let simmer for about 10 minutes.
  2. Gently mash the berries with a spoon.
  3. Strain the mixture through a fine-mesh sieve or a clean kitchen towel to remove the skins and pits.
  4. Pour the strained liquid back into the saucepan and add the sugar and lemon juice.
  5. Bring to a gentle boil, stirring until the sugar has dissolved.
  6. Let the cordial cool, then pour it into a clean bottle. Store in the refrigerator for up to one week, or freeze for longer storage.
